We’re hiring a Kitchen Supervisor (Assistant Kitchen Manager)! We’re looking for a kitchen rock star with culinary chops to help us run our evening operations. This role is for the ultimate hybrid and jack-of-all-trades – this is a unique opportunity for a kitchen veteran that wants to also explore a path toward management and broader business operations.
Viet Nom Nom has multiple business operations and we’re looking for our Kitchen Supervisor to work hand-in-hand with the Owner and Kitchen Manager to handle the company’s multi-faceted and complex day-to-day operations. This includes food production, kitchen management, oversight and control of staffing, training, inventory, ordering, operations, and customer experience.
We've grown like crazy in just a few years, leveraging our unique menu & strategic partnerships, and are still in crazy growth mode, as we identify new locations in 2020. The Kitchen Supervisor has the rare and special opportunity to work closely with the Owner to simultaneously develop blueprints for existing businesses AND new operations. Scheduling Expectations:
- 45-50+ hours per week – primary hours are in the afternoon and evening (~12-9pm)
- Schedule alternates between 5 night-shift and 6 night-shift weeks (Mon-Sat; we are currently closed on Sun)
- All-hands-on-deck coverage for staffing issues & occasional special events & festivals
Duties & Responsibilities:
- Working hand in hand with the owner, you will fully understand and align yourself with the company-wide vision and guide your team effectively and efficiently to that vision.
- Support the Kitchen Manager to supervise the staff, execute food production needs, and transition morning and evening crews & operations.
- Develop your knowledge of our business and sales channels then incorporate this information into the daily, weekly, and monthly production schedules, prep lists, staff schedules, ordering schedule and execution of the plans.
- Your energy and optimism will raise the level of character, enthusiasm, and passion for what we do throughout the team.
- Ensure proper health, safety, and sanitation standards are met through regular preparation and training of staff for Health Inspections.
- Become an expert on the menu, including allergen information, ingredients, and cooking techniques.
- Understand and know every recipe, prep technique, and kitchen procedure in order to accurately and effectively coach current and future employees.
- Provide administrative & organizational support to the Owner with creation of prep & production sheets, calendar management, vendor management (service providers, third party ordering partners, food distributors).
Requirements:
- A minimum of two years of experience in a restaurant setting
- Proven experience leading a diverse team while building a collaborative and enjoyable working environment with high morale.
- Hold a valid food manager certificate
- Must be an organized, detail-oriented person capable of mentally and physically multi-tasking
- Able to maintain a calm demeanor even in the most stress-filled times
- You must be direct and thorough in all communications.
- Be able to work in a standing position for long periods of time (8-12 hours)
