Prep Cook - Chicago, IL
The prep cook assists the chef/cook in preparing the food, maintains the cooking environment clean and safe for all staff members and takes on culinary tasks as they arise. The job requires physical endurance as well as mental determination and involves working in high stress conditions. The work schedule is hectic, not always having set hours and requiring working in shifts; early mornings, nights and during holidays.

Essential Duties and Responsibilities
Daily Key Responsibilities
- Arrive on time, in uniform and ready to work
- Ensuring the food preparation areas are clean and hygienic
- Washing utensils and dishes and making sure they are stored appropriately
- Sorting, storing and distributing ingredients
- Washing, peeling, chopping, cutting and cooking menu items
- Helping to prepare salads and desserts per the recipe
- Disposing of trash
- Cleaning and sanitizing the food preparation equipment, floors and other kitchen tools or areas
- Measures ingredients and prepares them in accordance to menu item specifications
- Washes and peels ingredients to be used in different menu items
- Cuts and portions different types of meat according to specifications
- Prepares different types of food; following carefully the recipes
- Makes stock soups to be used during cooking process
- Portions the food per recipe
- Accepts or rejects ingredients from food suppliers, based on their appearance and quality
- Keeps track of ingredient quantities on prep list
- Stores ingredients in dedicated containers, making sure that they are best preserved
- Informs superiors when the ingredients stock is getting low or when the kitchen tools do not work properly
- Carefully supervises the food temperature and the temperature from cooling rooms, to ensure that the ingredients kept are kept at the appropriate temperature
Qualifications:
- High School diploma or equivalent preferred
- A Prep Cook MUST have their food handlers license or manager sanitation license
- Excellent oral communication and listening skills
- Ability to follow directions
- Excellent customer service skills
- A Prep Cook MUST be able to obtain their own uniform; if unable one will be provided for you at a nominal cost. The work uniform is: Utility Shirt, Black Pants, black or white socks and black slip resistant shoes
Physical Demands and Abilities:
- Understanding the importance of health and hygiene and following all Health Department guidelines
- Must be able to read and understand simple instructions, memos and short correspondence
- Have plenty of stamina – your on your feet for your entire shift (outside of your break)
- Frequently lift/carry up to 25 lbs. Occasionally lift/carry up to 50 lbs
- Ability to reach with hands and arms in any direction and kneel and stoop repeatedly

- All staff that work a five-hour shift will be given lunch and water (free of charge)
- All staff will be provided with a hat or hair nets
- All staff will be given a thermometer to have at each event – for purposes of checking the temperature of all food items
